Friday hummous

Speaking of hummous, Friday afternoon lunch is hummous time in our house. My husband, Daniel, is a hummous snob of sorts, and while supermarket/mass market brand hummous is allowed in our house, it’s the other kind that he, and now the rest of the family, craves. That is, homemade hummous, made by one of the many hummousiyot in our general neighborhood.

Hummousiya hummous is made with freshly cooked chickpeas, lots of lemon juice, garlic with tehina added if the diner likes his/her hummous with tehina. In our house, we get it to go at Hummous Baba, Pinati or Abu Shukri, all hummousiyot in nearby Talpiot, with some fresh pitot, s’hug (hot pepper sauce), a bag of sliced pickles and sometimes a container of hot, freshly cooked chickpeas. Back home, the hummous presentation proceeds. You scoop the hummous out, smooth it onto a plate and drizzle some olive oil, paprika and za’atar (hyssop) on the top. Make sure the pitot are still warm, and then begin to l’nagev (to wipe) the hummous off the plate with the pita.

We often go through at least two plates (salad-size) of hummous in a sitting, and now that we’ve gotten our 1.7-month-old twins into hummous (they like to eat it straight), our hummous consumption has gone up.

Note that even if you don’t buy hummousiya hummous, the olive oil-paprika-za’atar presentation does wonders for the experience.
